but I'd go with #2 --

The lighter grades are mild in taste, sweet, and with less mineral content than the darger grades. The mid-season generaly yields mostly grade a dark amber (which is probably your selection). The Grade B Dark Amber has more mineral content and more maple taste -- which is preferred on the MC. However, the grading system is based purely on the quality of the syrup, which is generally about the same for all organically produced maple syrup. This is from the book!

With that said the No 2. Amber Grade organic sryup sounds just fine.
