Your kefir is ok. I do think that all light bubbly stuff floated up because of extra Sugar from the date. I am a bit surprised that whole date is gone in a day. I keep my milk kefir grains totally separate from al other sugars. Once I take them out of the kefir they go in the new milk. The kefir (with no grains) then gets honey, dates or raisins. The fermentation continues but the kefir now sweat and sour.

If you want less sour kefir just keep it out for one day and then refrigerate it.

If you want to have creamy kefir try coconut milk. I buy twelve pack from Amazon and use one can everyday. I took some milk grains and put them in coconut milk and now they are trained to the new milk. I also add honey when I am ready to eat my fruit breakfast, then pour the cream on top of it.

I tried this with almond milk and it did not work, it got fungus in one day.
