There are labs that can test all foods. They are not cheap because not many people go to them asking for the nutritional values in our food.

Brice Refractometer may help you with this question, but I have never tried soup before. I have tried vegetable and fruit juice.

In general, there are raw foods that can easily be digested by our body, but some are not. Raw potato is one example. Baked potato has more absorbable vitamins than raw. You do loose the enzymes in the fruits and vegetables when you heat them.
