Testing can only serve as an indicator, not proof positive either way. There are many, many things that testing can't show you. It's a snapshot and if you're lucky, you'll catch a glimpse of what's happening. You can treat someone according to testing, but most often, you'll be treated according to signs and symptoms.
Your low functioning gall bladder and intestinal flora imbalances are typical of a post-antibiotic syndrome, which creates systemic fungal candida. That means that you'll also have liver congestion. Low HCL means deficiencies of protein, iron, B12, folic acid, calcium, magnesium, zinc, and many other nutrients. You won't be showing signs of these deficiencies in testing for years, or decades. By then, you can develop other conditions.
If you've had antibiotics, you'll need to start reversing their effects in the body.
