Question about taking betaine hcl

This may not be the right place to post this as I don't have acid reflux, but I'm beginning to take betaine hcl as I have low stomach acid.

I would like advice on if and how I should take it when I eat something without protein, such as a salad, vegetable juice, or chocolate. Should I eat some nuts so I can take an hcl capsule, or should I just not take the hcl?

I want to take more of it so I actually start digesting all of my food. I like the effect it's having so far when I have it with protein. I don't eat meat, but I do eat kefir cheese and I just started eating salmon so that I will be able to take the hcl with dinner. Eating enough protein has always been a problem for me because I just don't like meat or fish.

I am thinking of eating more eggs now - I had stopped because they make me break out - but I have a feeling that is because of undigested proteins, and now that I'm taking hcl, I'm hoping it will stop that problem.

Thoughts please...?
