Black Garlic is by far my favorite healthy and tasty food. It has a sweet flavor, like dried cherry or tamarind. You can make it yourself, easily, with a rice cooker, slowly aging it for two weeks on the "keep warm" setting.

unlike raw garlic, the aging process makes it much easier to digest, and even people on low fodmap diets may find it poses no problems.
in my own case, i feel it has helped improve SIBO symptoms, and is a good source of fiber to promote regularity.
