What's your favorite super green? Over the years as a gardener, cook and wild food forager I've come across many tasty and unusual greens. There are so many good ones out there.
I love kale because it is so nutritious, versatile (it goes in smoothies, can be baked as chips, cooked or raw)and it grows so easily in my cool climate.
I also love lambsquarters. High in vitamin E, this weed replaces spinach in much of my cooking. But it does make weeding in the garden agonizing since I don't like to pull it up.
