Help! Kefir Starter/Coconut Milk


Yesterday I mixed 1 packet of yogourmet kefir starter into a cup of warmed So Delicious Coconut Milk(I can not drink cow/dairy milk)then mixed into rest of milk. I made the mixture yesterday evening and now at 1:30 pm it looks strange(to me). The liquid has separated leaving a cottage cheesy looking substance floating in the bottom and a little on top and a cloudy liquid. Have I done something wrong? I have only ever made water kefir before this and used dehydrated grains. This is my first time making a milk type kefir and first time using a starter kit. I live in Israel and have found dairy free milk kefir(or any kefir for that matter)extremely hard to come by. I used only glass/plastic and covered with paper towels to allow breathing, it does have that kefir smell which is somewhat sweet yet sour at the same time(to me). I guess I assumed there would be no separation. Did I ruin it? I hope all is well it costs $7 for that 1 quart of coconut milk here. Thanks B.F.T.M.
