I see you're posting, so maybe your question is still relevant.

The time you go into ketosis depends on your liver glycogen stores at the onset of a fast. If it's full, as happens after a high-carb meal, in a healthy person it will take 36-48h since the last meal. If it was already depleted somewhat, it will take less time. Interesting that people with cirrhosis go into ketosis "at the drop of a hat". It's cause a cirrhotic liver cannot hold much glycogen.

The other variable is the diet prior to the fast. If it was high in fat, then yeah you switch to ketosis sooner. Or, if you're on a ketogenic diet, you should be in ketosis already before even starting the fast.

Re epigenetic changes, I think practice only makes the process smoother, but it should not make it shorter. The criteria is liver glycogen stores and the diet prior to the fast vs the current energy demands of the body.

Then there may be other causes that have to do with enlarged spleen or lymphatic nodes. This usually comes with lack of appetite and if you go into a fast in this condition, it may take a few days more than usual to transition to ketosis.

That's the long answer. The short answer, it depends on a number of factors.
