Why do I swell up when I am exposed to fluorescent lighting?

Okay, so throughout my life i'd say since 6th or 7th grade I've had the weirdest thing happen. In school, outside of school, I would generally be in a large group of people and then suddenly I can't think, I can't remember what I was doing, I pretty much forget how to talk to people and I can't recall information easily.
Sometimes i'd be extremely on point, social, as if I never had any issues, but then suddenly boom, it hits me. I tried diets on top of diets, exercise on top of exercise, anything until
Literally just a month ago I figured out that at least some of my problem is fluorescent lighting.
If I step one foot into target, with all those fluorescent lights? Or even walmart? BAM. My hands get red and blotchy, kind of swollen, sometimes I get brain fog, I always get mood swings good or bad, memory loss, personality change, change of interest, sometimes lasting for days or permanent until the next episode. Completely uncontrollable. What I eat almost directs these changes in mood ever so slightly, but its so hard to keep track when you're living the affects.
I think different kinds of lighting affect me differently, sometimes my mood will jump to Mania, or anxious, or depression. That's also what makes it hard to keep track of, it feels like its random.
So my hands slightly swell, turn red, my veins dilate, I have trouble focusing to varying degrees, trouble speaking, my energy levels fluctuate from extremely high to low, my recall ability will jump from "I can't remember anything about anything" to "remember back in the days" mode. I can't focus on a task, i'll get randomly anxious, and after going back outside from a room with a fluorescent setup the effects last for varying amounts of time, sometimes days.
I've kept a food journal for an entire two months and changed my diet from eating everything to vegan, to vegetarian, to meat once in a while, to meat every day and I haven't really learned much. There doesn't seem to be too much pattern.

I didn't get to take another, but I will take a before and after tomorrow before and after I walk into my class (lots of fluorescent lighting).
Has anybody ever heard of something like this? If so, please help! I would appreciate it more than words could even describe.
