Hi, when I strain my water kefir, I put two bags of fruit tea in the strained kefir and leave it until I have time to bottle which can be another 3 - 4 days, so it is a second fermentation. Sometimes it fizzes a lot and other times it doesn't. I also make a strong tea from green tea with jasmine flowers and olive leafs that come from my own olive trees and dried by me. I dilute the kefir 3-3-3 like 1/3 kefir, 1/3 tea, 1/3 water and then sweeten it as I don't like it unsweetened.
