Any dairy products will increase mucous to some extent. Cultured dairy products will not form as much mucous as uncultured dairy. I would try it out and see how you feel, there are also other cultured products like sauerkraut and kimchee if you don't do well on cultured dairy.

Also just want to make a point that many health "experts" recommend to eat a diet to reduce mucous, this is not an optimal diet for ALL people and there are plenty of people who actually have a lack of mucous in their bodies, for them mucous-forming foods are quite beneficial. But there are also many people that do have too much mucous and for them, it is best to avoid mucous-increasing foods of which dairy is probably at the top of the list.
