I agree! They are delicious. I have a large wild patch and snip them when they are about 8 inches out of the ground in the spring. I cook them like chard or spinach and dry a bunch too. I've also thrown them in green smoothies. Once they are wilted they have no more sting. Nettle tea made from the dried ones tastes just like a broth and is so rich and delicious. I haven't added them to soup but I will now! Thanks
