Searching for "Athlone Institute of Technology Coconut Oil" yields comparative research of the untouched oil and enzyme-treated oil. They've had similar findings with pre-digested milk as they have with pre-digested coconut oil.

The modified oil strongly inhibited the growth of Streptococcus bacteria, including the mutans version responsible for acid production. It affected candida as well.

What enzymes did they add though?
