Archus, originally,I bought my first kombucha "scoby" from ebay--there are good sellers there, and on Etsy--just check their feedback. I don't recall the supplier, sorry. Then, at some point I stopped making the kombucha for awhile, anf finally got rid of all my scobys (they add up!) and had to start from scratch--this time I created my own scoby--from a purchased bottle of organic, unpasteurized plain kombucha.
It works! Just use the whole bottle as your starter, and after about ten days or so,I had a viable scoby--to then start a new batch with. The kefir I got dehydrated,from an ebay seller--will see how it goes. lots of people in the Natural Healing forum recommend "The Kefir Lady". Apparently,it's preferable to start with fresh,un-dehydrated water crystals, but I have faith, these will come back to life. Depending on where you live, you go with what's available.
I've got four bottles kombucha in a second ferment in the frig right now, with cherry, apricot, ginger juice...
They should be good to go soon. The very best kombucha I ever had sat out on my porch all winter,corked. I lost a few bottles, but the remaining was sublime. It was apricot and ginger, drunk the next summer. That bottle was as good -or better- than my at-one-time favourite champagne, Veuve Clicquot. Delicious. The probiotics (a long list of good stuff) are REALLY where it's at.
