I recently discovered through IgG, IgA, and hormone testing that I had a significant sensitivity to gluten. But how could it be? I ate so many plates of pasta, so many sandwiches over the years! Well, my naturopath informed me that you can develop an immune response to something you are eating a ton of. Indeed I developed the condition eating a very poor diet of pasta almost every night, 40
ounces of malt liquor (sometimes two in a sitting), and very little vegetables, pretty much only onions.
My naturopath is now recommending a very strict gluten-free diet for 3-6 months to see if there's a positive response, as she says it can take a long time for effects of gluten to wear off. So now I'm checking product labels, even on rice and oats, to make sure there's no gluten, and it's in so much! The best strategy is to consume whole foods I prepare myself for as long as I can, which is going to be a real challenge here in Brazil. But after five and a half years, it's worth a try.
