We had this for dinner.

Here is a tasty best food dinner for diabetics. This evening we had “bulalo”, a traditional dish with a leg of beef bones cut. The raw bone marrow scooped out and not cooked. The bones, the cartilage, and the meat put in a pot of water to boil for 4 to 6 hours. All so very tender by dinner. We used tamarind and Chinese “sibut” to flavor the soup. Some salt and pepper. Very simple to make.

How to eat:

1. With a hot bowl of soup, scoop a thumb digit amount of raw bone marrow and dip in soup to get some soup in your spoon. Eat this so you get the nutrition of raw bone marrow and enjoy the soup. Those who are not used to eating raw animal fat will love this technique. It seems totally civilized. And the best nutrition… raw fat… raw bone marrow… where the stem cells come from…. creamy good.

2. Get some small amount of cooked meat, but a hunkier amount of the cartilage. It’s tastier and healthier that way. If you want to eat a lot of red meat, it is better to eat it raw, rare or seared.

3. Eat your raw cucumbers.

My kids liked the cucumbers sliced lengthwise. It balances the feeling of eating cooked animal fat.

As you can see… this meal is high in fat, low in carbohydrates, and very much filling and simple. Where’s the rice? No need for rice with all the fat and the cartilage and rich soup. The cucumbers at the end give a nice desert touch to this evening meal. Enjoy!
