Candida can upregulate inflammation in the body. That then increases inflammation in the brain, but at a much greater level. This level of inflammation could cause damage and inflammation that might create an autoimmune encephalitis that looks just like MS. Candida was linked with causing MS through these mechanism this past week. A low carb or no sugar diet can influence the make-up of the intestinal flora in such a way as might decrease production of short-chain fatty acids that have a protective, anti-inflammatory effect pon the intestinal tract. This might also upregulate inflammation in the brain through the gut-brain axis. This could also produce the autoimmune encephalitis.
