I would question whether or not dietary intervention would create die-off. Drugs definitely do due to their destructive effect. Herbs only tend to inhibit. I'm not sure that the effect of the immune system eliminating candida would create the "die-off" effect, but it's probably possible to some degree. The overall inflammatory response of the immune system is what people commonly refer to as "die-off".
Candida releases at least 200+ known intracellular substances that our body will react to. Early studies focused on the polysaccharide substances in the cell wall and later studies looked at the protein substances. The "79 toxins" that are commonly reported as being released by candida in many articles were the polysaccharide substances discovered in early research. Not all of the polysaccharide or protein substances elicit a strong immune response.
Histamine is normally produced in response to antigenic substances, so you could expect that to be a part of the picture. An immune response would normally be expected to taper off, due to resolution of the problem, immune system fatigue, or development of immune system tolerance.
