Aspartame is the methyl ester of a dipeptide, of phenylalanine and aspartic acid.

Neotame is aspartame, but with an added 3,3'-dimethylbutyl group on the nitrogen.

The 3,3'-dimethylbutyl group is present in my mind likely to create steric hindrance and to alter the metabolism of the molecule.

There's nothing neo about neotame, except the 3,3'-dimethylbutyl group.
