Peanuts are notorious for being contaminated with Aspergillus fungus that produce dangerous aflatoxins. These aflatoxins can lead to liver damage and liver cancer. But they are readily neutralized by the presence of vitamin C.
So Vitamin C kills fungus????? Or just Aspirgillis fungus?
Vitamin C is an acid, so it will control fungi. In this case though the vitamin C is neutralizing the actual aflatoxins, not killing the fungi.
