most likely the sulfur proteins and compounds in the coffee... organic is even better.

check out hIAPP along with sulfur in a search and note the patents for use in cases of amyloid diseases including diabetes mellitus - they contain sulfur compounds.

For that matter... look up sulfur along with diabetes.

sulfur cycles were/are broken due to agricultural chemicals and pollution.

Think how far back that goes (1860's), and when these problems started escalating.

It is not just sulfur though, however, sulfur plays a huge role in essential protein folding of critical sulfur proteins among other things.

Most all (all?) major epidemic diseases today are *folding* errors cause by a crappy polluted environment - which includes your lifestyle and dietary choices.

go ahead... enter Alzheimer's, Autism, diabetes, cancer, Pakinson's, ALS, and then *protein folding* in a search engine - one at a time.

genetic errors occur due to protein folding errors and then you get changes in gene expression. *genes* are not *fixed* they are plastic and change with changing environmental conditions, including food, quality of food, air, and water.
