Vegans switching to meat again, the broth (see first post in this thread) is actually an easier to digest food than chewing and swallowing chunks of meat or poultry is. The slow long simmering process of the bones, cartilage, and whatever bits of meat are stuck to those bones slowly breaks down the matter, and releases some of the amino acids, making the end result easier to digest.
In Japan an old saying says that anything can be cured with slow-simmered fish broth, which includes the cartilage and bones in the slow simmering.
