Histapenia (low histamine) - high methylation; something is not ok with some of the common recommandations; please contradict me if I'm wrong


They say they recommend a protein (animal) diet because it contains histidine, but it also contain methionine so something is not ok; if we have low histamine why high histamine foods like beer, wine, aged cheese, yeast-containing foods are not recommended (and indeed makes us feel worse, if we would have high histamine this would be logic; we also had the folic acid and B12 debate.... A well known website http://www.enzymestuff.com/methylation.htm

doesn't recommend folic acid and b12, and others say it's a must: other say that only methyl B12 is not ok.
And Vit C is recommended to Histapenia, when vit C destroys histamine, so this can't be good when you have low histamine.
Waiting for opinions.
