So over a week ago I brewed a batch of green tea with organic pure cane Sugar and added the Scoby mushroom I stuck it in a closet that I did not realize housed the air conditioner controls. SDo we are talking 60-80 degree temperature. I opened the tea today and I tasted it with a straw. The first thing I tasted was fizz so I went downstairs and bottled it immediately. I then took two of the plastic bottles, covered the caps with a paper towel and put them in the fridge for a few minutes and then took them upstairs to the closet.
I have made Kombucha before but I used black tea and I kept it in the closet for weeks until it tasted like vinegar. I am not used to Kombucha actually tasting sweet and fizzy, is that normal?
