Yep, Tony and Chris all agreement here with your comments.

A curiosity here: There is no mention of dietry complexity except within the normal paradigm. Sure many of today's crops have a depleted and poor nutrient profile. There are many foods available which people are not eating which retain their nutrient density. Edible weeds being one example. Tree carbohydrate sources another. There are many sources of good nutrition, often surprisingly high in nutritional status, which rarely get a mention let alone eaten.

Many supporting micro-organisms naturally occur on plant surfaces, leaves, roots, fruit etc. Washing these off deprives us of this rich feast of nutritional supports. Washing vegetables and fruit is done to remove "things" that we "suspect" are bad for us. We may remove more nutritional supports than we gain by "cleaning" produce.

Both these attitudes have the potential to increase dietry complexity and our capacity to better utilise that nutritional density. T2
