Sears has a Kenmore 70 pint Dehumidifer w/electronic controls for about $250. Then all you would need is back up generator, Berkey water filter, & of course, humidity. Really not a bad idea. A small town not too far from where I live has been without water for 2 days now because the town is trying to repair a leak in their well. The city is bring in bottled water. Temps over 100 degrees. Texas
