How retain Saturated fat when cooking soup for leaky gut?


My leaky gut has caused me to be intolerant to an unbelievable amount of foods including eggs, nuts, wheat, starchy foods and starchy vegetables and garlic and onions. I also cannot have grilled or oven foods due to grease.

The best thing I have been able to come up with is a simple soup beef+cauliflower+water+salt. This seems to be working and i can feel the stomach healing. I can tell it is the saturated fat in the soup which is doing the healing. However on most days i notice there is very little fat present in the soup, perhaps it has evaporated. does anybody know what may be causing the fat to disapear? what can i do to retain the fat?

This is the key to my healing please help.
