Restaurants will tend to not only add he miso it at the begining and let it boil wth the vegs but hey also add too much and that makes it too salty. At least thats the way the Japanese resturant here in the States tend to do. Miso sound should be subtle and light and a little transparent but they just add so much miso that it winds up totally opaque. If your GF makes it my way you'll definitely taste the difference. One veg that you should readily find in Japan that goes well with Miso soup is Daikon. Another fave of mine to add are Shitake mushrooms. They have a wondeful earthy flavor and are very healthy too.
