I have a question regarding sprouted grains. Rachel, at Dr. Lam's office said that Ezekiel bread and other sprouted grains were okay on Lam's diet suggestions. However on it doesn't say on the Ezekiel 4:9 cereal box that the contents is gluten free. To add to the confusion, I read the the following quote on Lam's web site.
"Usually sprouting, fermenting, or digestion can help go against some anti-nutrient effects. However, lectins are resilient to these types of processes and might even subsist in “healthy” sprouted breads. WGA lectin is very hard to break, as it is formed by the same disulfide bonds that produce vulcanized rubber and human hair, both of which are tough, flexible, and durable".
I plan to ask Dorine what she thinks during our next consultation, but I was wondering if anyone has first hand experiences with the Ezekiel products.
