My sis-in-law suggests "Everyday Cooking with Dr. Dean Ornish" which includes 150 recipes and tips on healthier cooking. I also learned a lot from The T-Factor Diet book. Some of the recipes are super, but mostly, you can learn how make most normal recipes healthier by substituting ingredients. I also enjoy "Great Good Food" by Julee Rosso, but sometimes you have to go to a gourmet grocery store to get the ingredients, too much trouble for everyday cooking but still a good read and some good recipes.
