I started making this 2 years ago. My husband and I had a wonderful dish at a local restaurant and LOVED the sauce. I asked the chef what it was and she said that she just cooked the heads and tails of fish down with tomatoes, onions, garlic, basil and oregano from her garden.
So that is what I started to do. My husband and I go fishing a lot and I have a large garden so we eat this quite a few times in the summer. I didn't know that it was so nutritious but I can tell you that if you let this cook on low for a few hours that your whole house smells good, and definitely not fishy.
