Flax seed question

So I'm trying to make some raw flax seed crackers and I've just thrown a bunch in some water to soak. I've heard that you can tell if they are rancid based on whether they sink or float, but I'm not sure which and half are floating and half have sunk--- brand new bag. Are the floaters the good ones or the sinkers? Thanks!
