At this stage I've used needles in combination with whatever is being fermented. For example I have made a Kim Chi like mixture and added needles. Another two combinations: finely diced mustard, kale leaf and nettle fermentation with Deodar needles (reduced salt with whey). And similar with bran with added young honey locust leaves. oak catkins and fir needles.

Pollen: Collect it by shaking the tree branched above plastic sheeting but make sure plastic sheeting does not have lots of "static". Usually older "well used" plastic sheeting is the best. Also collect other pollens eg oaks and eat the catkins.
