Ongoing Water Retention (Esp. After Caffeinated Drinks) Possibly Since A.) Salt Water Flush B.) Accutane C.) Nexium

Hello,
I've been dealing with an on going issue since July and I would like some advice.
I was diagnosed with Barrett's Esophagus and Chronic Gastritis in January of 2010. After the diagnosis, I quit caffeine and cigarettes which I consumed immensely for 10 years. I also went on a super strict diet of alkaline based food. At the time, I was prescribed Nexium (3 months) and Accutane (5 months)for Acne as well.
In June I went for a second endoscopy with a new doctor who informed me that everything cleared up and no Barrett's was present. He also said that I would be okay to drink tea again but in small quantities. I did just that, apprehensively, to help with the elimination problems I had since I quit. I also did The Master Cleanse for one week with no results what so ever.
In July, I noticed a weight gain of 5-10 overnight. At this point, I was drinking 3 cups of Earl Grey tea per day. I am a 28 year old girl who was always very slim so the weight gain did some good. But I knew it wasn't normal. This proceeded and in September, after a salt water flush, I noticed my feet and legs swelled up completely. I panicked, took a water pill and the swelling subsided. But to this day, I inflate if I drink anything. Not as bad at all but weight gain does occur. Whenever I drink caffeine, that's when it is worse, which doesn't make any sense being that it supposed to be a diuretic. Does anyone have any clue whatsoever as to what could have caused this and how to treat it? Any advice would be appreciated. I've been to my primary doctor who shut me out (she also shut me out when I assumed I had stomach issues prior to my diagnosis from a specialist.) As well as a OBGYN to check my hormone levels, which in fact were ok minus my Estrogen, which is low at 12.
And I also drink Dandelion tea daily with no results.
Thanks!
