As I have mentioned in other posts most cancers have a viral origin.  MCl is no different.  MCL has been linked to several viruses already, EBV and HCV.  Mainstream treatment of this cancer are antiviral drugs such as PEG interferon and Ribavirin.

Alternative medicine also relies on antivirals for the treatment of various leukemias and lymphomas due to their viral origins.

The best herbal antivirals for lymphomas are pau d' arco (lapacho, taheebo),  chaparral and andrographis.

Ozone therapy is also extremely effective for all cancers.  It works in part by killing cancer microbes including cancer viruses, by increasing cytokine levels., by destroying cancer cells through peroxides, by oxidizing carcinogens, etc.

 I have been researching alternative treatments (jucing, vegan diet, ozone, Essiac Tea , apricot kernels, rebounding, lymphatic drainage massage, the incurables program etc etc) for some time now but there are so many it is hard to know what will help the best. As the MCL is an overactive immune system we have to be careful not to send it into total overdrive,

Lymphomas are not really part of an overactive immune system.  Yes, there are more white blood cells, but this does not mean the immune system is overactive.  In fact cancer viruses take advantage of suppressed immune systems.

she also has sjogrens syndrome and rheumatoid arthritis so its evident that there is a lot up with her immune system.

These are both autoimmune disorders.  Autoimmune disorders are often mistaken for an overactive immune system as well.  But they also result from not only an infectious microbe, but also immune suppression through the adrenals.  I give a more detailed explanation of autoimmunity here:

Because of the autoimmune condition though it is important to avoid anything that is high in immune stimulating polysaccharides such as Essiac.  Since the rest of the immune system is functioning as it is supposed to the activation of white blood cells can speed up the destruction of tissues.  The focus for autoimmunity needs to be on antimicrobials to address the microbial triggers and adrenal support to correct the immune suppression and overproduction of low affinity antibodies.

We got her a green power juicer and she has juices everyday although right now its hard for her to keep anything down with the chemo.

If anyone has experience with MCL or an agresssive Lymphoma and treating it I would be very grateful to hear from you to hear your experience and to get advice on this.

We live in Ireland so it's a bit limited on the alternative side of things but myself and my family are willing to do whatever is necessary to get her better.

Germany is not that far away and they are big on ozone therapy.  As for the herbs I do not know what you have access to, but generally pau d' arco is widely available in many countries, and I have found it also helps to control chemotherapy side effects.  Having her sip on ginger tea will also help to control the nausea.  Use dried, not fresh ginger.
