With respect to the sleep schedule, let it roll off you. Be awake when your body tells you, sleep when your body tells you. Give up trying to control it, and it will be a source of calm.
With respect to the general anxiety, consider this. Are you reacting to discomfort that you're feeling right now, or to discomfort that you're expecting to feel as the fast progresses? The latter is too much. Concentrating on making it to the next second, the next minute, the next hour. Before you know it, time will be flying by.
This last time, I got slammed in the head by the truth of the statement "Thinking about food is not hunger" about 7 days in. Although it's a simple, easy to understand statement, it hit me in a weirdly spiritual way. I'd expect that your agitation is a sign that you'll get a nifty philosophical package on your mental doorstep sometime soon.
