The first statement (1) is made repeatedly on many web sites. I can not find a reference back to a scientific paper which explains the bio-chemistry. Some of the better web sites give the source of the information and it is: Kelley WD. One answer to cancer, 1999, Chapter 4. This says: “Apple juice (high in malic acid) or ortho-phosphoric acid, which acts as a solvent in the bile to weaken adhesions between solid globules.”

I also picked upon the fact that apples a very good at removing aluminium from the body.
