You did not mention other symptoms of hypoglycemia and the normal blood pressure would make adrenal issues less likely.

One thing that did stand out was when you stated drinking water but still feeling thirsty.  This with the muscle weakness sounds more like your potassium levels are dropping.

Is your heart rate off or irregular?  Any muscle cramping or restless feeling?

If it is a drop in potassium then there are a number of things that can cause this.  

As for the nettle leaf goes, it is easier to down the powder, but the leaves can be chewed up or even made in to a delicious tea.  I like making nettle leaf tea with a little lemon grass and stevia and steeping it overnight covered until it is almost black. Delicious!!!  Also a good source of potassium and magnesium needed for potassium utilization and balance.
