 Why are fermented food like yogurt considered healthy if lactic bacteria produce waste product.

Why should we eat bacteria wast product ?

These same bacteria are found in your intestine and help keep up alive and healthy.

I'm just questionning those stuff.

What this site is saying makes sens ( even thought I don't agree with the rest of the site) but what are your thought about it ?

What about lactic acid for instance, does it make stiff muscles ?

No, this is a common misconception.   It is lactate that creates the burning sensation in our muscles during exercise.  There is a link in this post with a great explanation:

But lactic acid does provide benefits to the body including inhibition of microbial growth, increasing nutrient absorption and acting as a backup fuel precursor for the body through gluconogenesis.


And ammonia ?

Again very misleading.  Even if it is true that ammonia is produced in fermentation it would be neutralized by the lactic acid they are complaining about.  Ammonia neutralizes acid and acid neutralizes ammonia.  They cannot have it both ways.  

And if they are so paranoid about ammonia then do they avoid eating all protein sources?  After all the body generates a lot of ammonia from the breakdown of protein's amino acids.  And if they eat meats there is ammonia trapped in the animal's cells, along with lactate, when the animal is killed.

"In industry, lactic acid fermentation is performed by Lactobacillus bacteria, among others. These bacteria can operate in the mouth; the acid they produce is responsible for the tooth decay known as caries.[2][3][4][5]"

There are various acids that can contribute to damage to the tooth enamel.  This is one of the reasons that we produce saliva, which neutralizes and washes away the acids.  But the acids causing caries are formed from bacteria on the teeth, not from fermented foods.  So just more misleading scare tactics from them.
