A small study showed that wheat flour which was fully hydrolyzed reduced the gluten to 8ppm using lactobacilli and yeast. The people who ate this showed no symptoms or villous damage. The control groups who ate unmodified wheat flour and partially hydrolyzed wheat flour both showed villous damage and symptoms.
This study may not have included people who are very sensitive to gluten.
