Temperature control for fermentation.

I have struggled to find a way to keep a proper temperature for fermenting. I live in the South and I don’t' have a basement or central air. I finally found a solution. Home brewers use external temperature controllers to control the temperature to an old refrigerator or freezer. This works great for fermentation as well as brewing. There is a temperature probe that goes inside the refrigerator runs to a control box outside the fridge to turn on\off power to keep the refrigerator in a good fermantation temperature range.

Some of the available models are:

RANCO ETC-111000 (digital)
Johnson Controls A419 (digital)
Johnson Controls AA19 (analog)

I bought the Johnson Controls analog unit. It works fine. The only drawback is that the "wire" from the temperature sensor to the controller is a copper tube, not a wire. If you buy one of the digital models, get the best surge protector you can afford. There are many reports of digital temperature controllers that died for no apparent reason.

If you need more information check home brewing web sites.
