Neat loaf
I kinda shy away from raw recipes that try to emulate foods that are not part of a raw diet. After looking at this recipe it sounded intriguing so I gave it a go and it is delish. As with most if not all raw recipes feel free to substitute or change to suit your palate as I've done with this recipe.
1 1/2 to 2 cups of chopped portabello mushrooms
1 Cup Walnuts soaked overnight
1 Cup sunflower seeds soaked overnight
3 - 4 Cloves of chopped garlic
1 Tblsp fresh grated ginger
1/4 tsp on Cumin
1 tsp Sea Salt
1/2 tsp Rosemary
1/3 cup chopped parsley
1/3 cup chopped cilantro
1/2 cup chopped celery
1/2 red or yellow bell pepper
1/2 cup chopped onions
1/2 cup shreded carrots
If you like a little heat you can add some of you fave hot peppers.
Chop the Portabello and marinate in Nama Shoyu or Tamari for a while. I always like to take the garlic and ginger and run them through the food processor first so they get them finely chopped so their flavors mix evenly .
Put all the ingredients in a big bowl and mix them all together. At this point things will be smelling really good and you can actually serve as is on a bed of lettuce or ar part of a wrap, nori roll etc.
After mixing if you have an auger type juicer run the mix through with the blank plate rather that the juicing screen. This will make a nice homogeneous paste. If you don't havr and auger type juicer you can just put it all in a food processor till it get ot a paste like consistency. I favor the juicer. Again at this point you can just eat as is of you can form it into a flat loaf about 3/4 to 1 inch high and put it in your dehydrator. I made it into 3 smaller loafs. I dehydrate and 105 deg. After around 4 hrs your loaf will have enought solidity to turn over. Depending you which dehydrator you have you can dehydrate another 4 to 6 hrs. The loaf will turn a dark brown and will actually resemble a regular meatloaf. I can just eat straight but I imagine you can make somekinda tomatoey marinara raw paste using regular and sundried tomatoes to put over it.
Having had veggie burgers in many different restaurants over the years I imagine that for non raw fooders you can make into patties a grill like regular burgers. Either way they should be really delicious.
