Hi Iwm31,
From what I understand is that raw veggies (especially the leafy ones) can be hard to digest due to some protective coating or something they naturally produce. A quick blanch or steam will help remove that coating but still keep a lot of the enzymes alive (or so I've read). I think raw is always better but if you have gut issues then for digestion lightly cooked might be the answer. Hope that helps!
