chia seeds how to avoid oxidation of omega3 and risk of mycotoxins

Can you help me in this below:
Hello guys, What way do you recommend to digest chia seeds so that risk of oxidizing unfatty acids before ingestion is minimized.
Momently I practice ingesting of chia seeds in following way:
1. I buy several killos of chia seeds
because in Europe this still not officially allowed to sell as human
food ( EFSA european food agency should support .. )so we
fans buy it as bird food in bigger bags
as we used to buy hemp seeds ( canabis sativa ) before market
was opened.
2. I keep those seeds in paper bags in dark and cold place for
several months after I buy from the nearest distrbiutor.
3. Then I grind two table spoon of seeds in grinder slowly so that
temperature is not raised.
4. Then I put ground seeds in few table spoons of water
( I am afraid of hydrolisis here....) and
leave it for 15min to 30 min in frigidaire so that jello
is made.
5. After that I add few tablespoons of EM microrganism
cleansed and edible concetration to jello.
6. And I consume it.
When I am on some endurance mountain long distance running or
long distance mountain biking tour I have ground seeds in my
bag. Then during the way I add water from the mountain creeks
and wait till jello is made and ingest.
I am not sure that this way with water is optimal way.
I am also considering since the seeds are not pre-packaged of the risk of possible mycotxins or molds although I keep in the paper package in cold and dry place.
Has anybody have some experience or ideas or nay hint on my present way of consuming chia seeds? I need to be sure before I offer this way of consuming to members of my familly who have the need of better way of omega3 fats and plant proteins.
I was considering how to minimize the risk of oxidation.
I guess vitamin E ( aditional not only the one that is contained in seeds )
is best protection of oxidation.
I am growing barley grass for juicing in home plates. So I was considering that at home ( not on tours or at the job ) I could soak the seeds in barley juice instead in water. I guess that barley grass juice is containing significant amounts of vitamin E.
