The protein ratio of the endosperm is a major factor.The higher the protein ratio the better.Some seed comes from mills where different crops are blended together to meet the needs of there costumers.This blends different protein ratios in the seed blend.Bypassing the mill and go straight to the farmer can fix the blending issue.You can also focus on seed prep to enhance sprouting.
