Egg plant overdose :)
I have had a very good crop from my egg plants this year, and was running out of ideas with what to do with them, I made up a recipe last night, and it was soooooo delicious I thought I would post it here, where all the good recipes are :)
Ingredients:
3 large egg plants
olive oil, (extra virgin)
a little salt
fresh mint leaves, basil leaves, thyme and spinach
walnuts
parmesian cheese, or whatever hard cheese you have on hand
Make a pesto of the herbs, spinach and walnuts
Slice egg plants and lay them on a flat oven tray, lightly oiling both sides with olive oil. Lightly salt egg plant slices.
Spread the pesto on top of the egg plant slices, quite thickly.
Bake in a moderate oven for about 15 mins, then add the cheese on top, put back in the oven for another 5-10 mins.
Thats it, really easy, and really yummy.
