Healthy staples


So, I'm looking for more regular staples to bring into my diet. My hubby and I recently moved to the country so we have to eat at home. This is a good thing... except that we're both very used to going out a lot. We've been trying hard to eat healthy, but as with anything, too much repetition makes for a boring diet. I'm trying to find more recipes that are easy enough and healthy enough that we would like to make it a staple.

Goal: Find easy food that is very healthy and VERY tasty.

We love good food. If it doesn't taste very good, we won't repeat it much. Our current diet staples include:

Veggie sandwich (we eat this the most b/c it is goooood)
Salads
Veggie curry with brown rice

Less often we'll have:
Chicken Salad Sandwiches
Cauliflower Soup
Bad meals

I wonder if folks would offer links to their favorite recipes featuring mostly veggies? Veggies and lean meats are great, too. As you can see, I don't do that many cooked veggies, but I'm happy to. I try not to do too much starch like potatoes and corn but we'll do some. Super tasty green sides would be a happy addition to our meals. Also, I'd love to find interesting/taste salad combos, preferrably with salad dressing that I can buy.

Anyway, tell me your favorites and I'll tell you mine.

Veggie Sandwich:
Carrots (sliced w/grater)
Cucumber slices
Tomatoes
Spinach
Avocado
Sprouts
on Wheat or Oatnut bread with:
Mayonaise

(This is good on its own but even better with the original Spike seasoning or McCormick Garlic Herb blend.)
