Is something wrong with my kombucha?

It0s up to day eleven but I took this yesterday on day ten. Most of it is growing under the tea after i did the taste test yesterday. it did taste like apple cider but I want for it to stay under longer. I was wondering how much longer should i keep it before I bottle it

also I was at whole foods today and the only jars they have are half gallon and 1/4 gallon sized bottles. The half gallons have metal caps and i was told that its not good to have a metal cap for kombucha and the 1/4 gallon had a plastic cap which i was told was bad as well. I cant find corks so can i just sanitize these glass grape juice bottles i purchased since they are made with plastic caps.
