There has to be countries that have their own currency and enough farming and production to maintain. The problem is if we find them and everyone goes there they wont!
Except maybe Canada. It's huge and has the best banking system in the world. They have very strict borders too, so when the collapse happens they will most likely be secure.
Notice: Banking in Canada began to migrate in earnest from colonial overseas banking operations to a local banking system with the founding of the Bank of Montreal in 1817.
